allow me to (re)introduce myself...

I've been on the fence about going back to write on this blog. It seems like everyone who thinks they have an original thought has a blog these days. Usually I wonder if they're in it for the attention or maybe the freebies. Well in this case, I can assure you- it's both. 

But really, writing has always been a form of therapy for me. I enjoy writing and I enjoy sharing my work with others. 

I went back to read some of my earlier posts and it's clear I am not the same person I once was five years ago. So I think that it's only right that I take the opportunity to reintroduce myself before I start to post on...

I'm Liz.
I'm a wife, mother, teacher, and coach.
I've learned that humor can get me through anything. Unfortunately that has led to me making jokes at really inappropriate times. 
I don't believe in regret- I believe every experience becomes a part of who you are and that everything happens for a reason.
I've been told I can read people very well, however I have zero intuition with my own kid most times.
People tell me I'm a suck up; I just know that I can usually get anything I want by being nice. Manners do go a long way and karma is a sneaky bitch.
I'm pretty sarcastic. That's what happens when you spend your days with middle schoolers. 

I'll be honest, I'm struggling writing this introduction because the truth is, I'm not sure who I am right now. Like many women I know, I spent all of my twenties on adventures of self discovery figuring out who I was. I bought a house, lived alone, traveled, and became fiercely independent and adventurous. 

Shortly after hitting 30, I got married and pregnant shortly after- that person who I was slowly started to take a backseat as I took on new responsibilities in my new roles as wife and mother. I suppose you'll all be joining me on this journey as I reinvent myself.

Pork is for Piggies..

Such a big believer in being a lazy cook... So lazy, in fact, that I can barely use my crockpot cause I never have food in advance to toss in there come 7am! I was feeling a little inspired this week and actually researched pulled pork recipes in the parking lot of Wegmans (seriously, what did people do before smart phones?) and found this gem from tablespoon.com, so I figured I'd branch out to add to my repertoire.

That's right. THREE ingredients. Three. That's two less than the number of fingers on my hand.

2 lbs pork tenderloin
2 cans root beer (recipe says 1, but I left it on longer so I added a can)
One bottle BBQ sauce (I used Dinosaur, cause, well, it's Rochester)

Directions
Cook pork with root beef on low 6-10 hours
drain liquid, separate pork
Mix in sauce, keep warn until ready to eat

I mean, how great does this look?

This made enough for 5-6 sandwiches, and reheated like a DREAM. Amaze-balls.

Home Ec Dropout Does Thanksgiving

I had the opportunity to cook our own brand of thanksgiving dinner with my gram today. One of the few "heirloom" recipes my mom's side of the family has is called chicken pot pie though it hardly resembles a pie. It's been in my family since before my great grandma and has always been one of my faves. Grandma hasn't made it in awhile because it's too hard to roll the dough for the pasta. I was thrilled to take it on and learn from her- and I think we did pretty ok! Even Alan was impressed- he'd never had homemade pasta before! It was a great day!

On a separate note, this year has brought a lot of change to my life and I could not be more thankful for it! I now have a new house that I adore and two "new" jobs in teaching and coaching that I simply cannot get enough of! Furthermore, I have had two of my favorite people move closer to me and I'm do lucky that I get to see them often!
